The Great (Dessert) Debate!

Cupcakes or cookies? The great dessert debate.  And as I sat there on a lazy Sunday afternoon that was the question.  I had two mixes in the cupboard and time to kill.  What to do.  What to do. So I posted on Facebook and asked if anyone had any ideas.  I then tackled Google.  Finding nothing I almost gave up in defeat.  Almost.  But it was then it came to me.  Why have one? Two is better.  Thus the birth of Cookie Bottom Cupcakes.  And boy are they amazing.  Simple too!

These are so simple I can't believe I didn't Frankenstein a batch of these before. As simple as 1 2 3:
1) Prepare your oven. I baked these suckers at 325 for about 18 minutes and had no problems. Line a muffin pan with liners of your choice.  I wouldn't recommend butter or spray oil as these are heavy, and would be a pain to get out of the pan.

2) Prepare the mixes of your choice.  I was lazy and used boxed mixes from Betty Crocker and Gluten Free Pantry. But anything will work.  Homemade would be excellent too! 

3)Line the bottoms of your cupcake liners with about 1.5-2 cm of cookie dough and top with cupcake batter.  Put into your preheated oven for about 18 minutes, checking every 5.

Voila! I topped my creations with (don't judge my lazyness.  Normally everything I make is homemade.  Or almost of it ;) A baker never tells!).... Betty Crocker Milk Chocolate Frosting.  We had these after dinner and they were excellent! Feel free to ask if you have any questions about the above.  I hope this turned out ok... Being a teenager sucks.  Especially when you have allergies or other medical conditions.  And that would lead you to me.  A teenager with Type One Diabetes and Celiac Disease (Celiac Disease: An intolerance to wheat, oats, barley, and rye.  Consumption leads to extreme sickness.  Not fun.).  And while some teens get through their troubles with outlets such as music, running, or art,  I bake.  And bake.  And bake.  Usually once a week I'll whip out something new.  And usually my best successes come when I am enraged or sad.  So during Christmas (This is just an example.  This is not religion specific.) when most of my friends were getting clothes, or money, or electronics I was getting Wilton baking products.  Pans, decorating sets, cupcake platters, and more.  And I love it all.  I'm not your typical teenager.  I love to read, dance, paint, and, of course, bake.  So enjoy what you may find posted on this blog.  It might not always be perfect (my baking is far from perfect!), or cooked properly, or presented in the most elegant way, but it's mine.  So enjoy!
